Keep the sugar syrup in the refrigerator to cool it down. Take the temperature for about 50 F. As soon as the syrup starts to cool down, the sugar gets less soluble. So, chilling the mixture does the needful.

Time to prepare your string while the sugar syrup is cooling down. Cotton strings would be a better option as they are rough and non-toxic. Use a pencil or a knife to tie the string. Do it so that it can rest along the jar. Make sure the sides or bottom doesn’t get touched by the string.

Keep an eye on the crystals but make sure to not disturb them at all. Dry them and eat it only when you are satisfied with it. Let the crystals grow for 3-7 days.

Keeping the mixture for a long time will result in these rock candies.
